Cheese-Stuffed Peppers recipe
Ingredients:
6 large green bell peppers.
1 ½ tablespoons of onion, chopped.
5 tablespoons of butter, divided.
2 cups of breadcrumbs.
3 cups of grated Cheddar cheese.
½ teaspoon of salt.
Pinch of black pepper.
Directions:
Slice off the stem end of the bell peppers and deseed.
Boil for 5 minutes, and drain upside down.
Fry the chopped onion until just soft in 1 tablespoon of the butter.
Combine the onion and butter mixture with remaining butter, breadcrumbs, 2 cups of the Cheddar, salt and black pepper; mix thoroughly.
Stuff the bell peppers with the mixture and sprinkle tops with remaining 1 cup of grated Cheddar.
Put in a greased baking dish and bake at 375°F (190°C) for about 30 minutes.
