Chicken with Bell Peppers recipe
Ingredients:
2 tablespoons of vegetable oil.
2 medium bell peppers, cut into 1/4-inch strips.
1 small onion, chopped.
1 clove garlic, finely chopped.
1 lb of skinless boneless chicken breasts, cut into 1-inch pieces.
1 teaspoon of salt.
1/8 teaspoon of freshly-ground black pepper.
1/2 lemon.
4 cups of hot cooked rice (alternatively use hot cooked couscous).
Directions:
Heat the vegetable oil in 10-inch skillet over medium-high heat.
Cook the bell peppers, chopped onion and garlic in the oil for about 5 minutes, stirring occasionally, until the peppers are almost tender.
Stir in the chicken pieces, salt and black pepper; cook for about 8 minutes, stirring occasionally, until the chicken is no longer pink in the center.
Squeeze juice from half a lemon over the chicken mixture.
Serve with hot cooked rice or couscous.
