Crockpot Beef and Peppers recipe
Ingredients:
2 lbs of lean round steak.
2 green bell peppers, thinly sliced.
½ onion, finely chopped.
1 cup of beef broth.
2 tablespoons of low-sodium soy sauce.
½ teaspoon of ground ginger.
1 garlic clove, minced.
1 teaspoon of Worcestershire sauce.
Mashed potatoes, cooked, to serve with.
Directions:
Cut the steak into serving size pieces. If you like, brown the steak in a some hot oil before adding to the crockpot.
Place the thinly sliced rings of bell pepper in bottom of the crockpot.
Place the meat on the pepper rings, avoiding stacking one piece directly on top of another.
Combine all of the other ingredients (except mashed potatoes) and pour over meat and peppers.
Cover and cook on LOW for about 8-10 hours.
Serve with mashed potatoes.
