Roasted Bell Peppers with Herbs recipe
Crunchy, peppy bell peppers become sweet and juicy soft when roasted. Tossed with fresh herbs and a lemon dressing, these bell peppers are worthy of first-course appetizers or anytime snacking.
Ingredients:
4 red bell peppers
4 orange bell peppers
½ cup chopped fresh parsley
½ cup chopped fresh basil
1 tablespoon olive oil
1 tablespoon lemon juice
1 garlic clove, minced
½ teaspoon salt
Directions:
1. Place stovetop on low flame; place bell peppers directly over flame and cook, one at a time, to char on all sides, turning to brown. Place charred peppers in a large paper bag, close, and allow to cool 15 minutes. Remove peppers from bag, peel off skins, and remove seeds. Chop roasted peppers into 1-inch pieces.
2. In a large bowl, combine peppers, oil, lemon juice, garlic, and salt; toss well. Allow to sit 10 minutes for flavors to combine; serve warm or at room temperature.
